Food heaven in Zug | zum Kaiser Franz im Rössl
The restaurant zum Kaiser Franz im Rössl is a restaurant located in the center of Zug and currently holds 13 Gault Millau points.
We felt blessed when owner Felix Franz invited us to his wine and dine event. The restaurant zum Kaiser Franz im Rössl has already convinced us in the first few minutes; Felix Franz warmly welcomed us with his sympathetic, Austrian accent and showed us his beautiful, lovingly detailed restaurant. We truly felt, that the customer is the king here or, in this case, the emperor.
Our culinary journey started with a beautifully presented amuse-bouche followed with the first course:
Gorgonzola mousse with wild boar raw ham, truffle honey and garnish...
...and raw marinated salmon with pumpkin panna cotta and turnips:
After that, we tasted a very special "Kürbissupperl"; a Styrian cappuccino with pumpkin-seed oil. We never tried something like it before and loved it:
As a third course we tried a beautifully presented mushroom ravioli...
Then we ate the real "Wienrschnitzerl" in small size as our fourth course (you'll get a larger one if you order it, we got the small one because we had more than one course) with potato cucumber salad. This was literally the best Schnitzel we ever had (and yes, we even tried them in Vienna).
Also the fifth course; simply imperial. A duet of vension entrecote and plucked deer ragout with autumnal side dishes:
Last but not least: the Kaiser Franz's "Germknödel" with poppy sugar and vanilla sauce. Felix Franz told us that he even patented the "Germknödel" and produces them in Germany now and even sells them! We are massive fans...

The ingredients were very carefully selected and almost always local (or from Austria). Chef Christoph Zrim and his team did an amazing job. The food and the presentation was outstanding.
Even Winemaker Franz Netzl from Austria came to Felix Franz's restaurant to present his wines for each course. We were incredibly lucky to try them - all the wines were simply fantastic.
A beautiful chandelier is emblazoned in the center of the restaurant, impressive paintings are on the walls including a handpainted work "The Bathing Woman", which also hangs in the Louvre in Paris. The tables were fantastically decorated with great attention to detail. We escaped to another world and felt like being at a gala dinner.
The staff was extremely warm-hearted and they were all dressed in traditional "Dirndl". The owner Felix Franz himself came to every table and asked if everything is fine and talked with his guests and even served them. A perfect host!
What a restaurant, what a culinary experience!
We have to admit...this restaurant stands out as one of the best we have ever eaten at. Highly recommended! Thank you Felix Franz and your team for having us, we truly had a blast!
Prices:
Haute cuisine, price level is appropriate for Zug and absolutely fair. The portions are large and the products are local or directly from Austria. Knowledgeable staff and exciting presentations.
